Spence’ Salad: Recipe courtesy of Gillian Spence

Grill chicken breast until cooked through
Microwave wholegrains and quinoa
Prepare the salad leaves, avocado, seeds, tomato and pepper.
Dice the chicken
Toss everything together in a bowl including the olive oil and serve

1 grilled chicken breast
1 diced avocado
25g pomegranate seeds
5 cherry tomatoes, halved
1 diced sweet pepper
2 tsp extra virgin olive oil
