Parma ham and watercress soup

Chop and fry onion in 2tbsp oil until soft
add stock, watercress, spinach, nutmeg and salt and pepper.
Bring to boil, then cover and simmer for 30min
Take off heat and stir though the crème fraiche
Top with Parma ham and drizzle remaining oil

250g watercress

1 tbsp. crème fraiche
