Mushroom and chestnut soup

In a large pot fry to mushrooms in the olive oil until golden brown
Add onions and chestnuts and turn down the heat.
After a couple of minutes add stock and bring to the boil
Simmer for another 10min before blending until smooth
Season and serve

1 small onion
100g ready-roasted chestnuts
500ml good quality chicken stock
salt and pepper to taste

100g Shiitake mushrooms
150g chestnut mushrooms
150g portabellini mushrooms
1.5 small onion
120g ready-roasted chestnuts
600ml good quality chicken stock
salt and pepper to taste

Category 3 recipe

1.5 tbsp. olive oil
125g Shiitake mushrooms
175g chestnut mushrooms
175g portabellini mushrooms
2 small onion
140g ready-roasted chestnuts
700ml good quality chicken stock
salt and pepper to taste
