Moroccan mince and couscous

Sauté onion in spray oil
Add mince and brown
Add turmeric, cinnamon and cumin and stir through
Add chopped pepper
Add vegetable stock and simmer for a few minutes
Add apricot and broccoli and cook for a further 5min
Dry fry the cashews
Cook couscous couscous in water and sit for a few minutes as instructed.
Serve couscous couscous with mince and sprinkle the cashews over the top

400g lean beef mince (5% fat)
1 large onion
1 red pepper
1 broccoli
1 tsp turmeric
1 tsp cinnamon
1 tbsp. cumin
75g dried apricot, chopped
350ml vegetable stock
salt and pepper
50g roasted cashews
125g couscous couscous (uncooked weight)

2 tbsp. cumin
100g dried apricot, chopped
350ml vegetable stock
salt and pepper
50g roasted cashews
