Chicken and Prawn Fried Rice

Blitz the cauliflower (minus the leaves) in a blender or grate.
Mix the sweet chili sauce, soy sauce and toasted oil in a small bowl.
Cook the sesame seeds in a hot wok until brown.
Add the sauce and oil mix to the wok to heat
Stir fry the chicken for 1-2min before adding the prawns and cook for another 1-2 min
Add the cauliflower rice, mangetout, red pepper and 2 tbsp. water to the wok and cover for 2min
Then add the spring onion, garlic and ginger and stir fry for a further 1-2 min
Moving the wok contents to the side, pour the eggs onto the base and let them cook for 30’s before mixing in with everything else
