Chicken and Chorizo Jambalaya

Cook the chicken with the oil in a large pot with a lid for 5-8min or until golden brown. Then remove the chicken and set aside
Add the onion to the pot and cook for 3-4min
Add the pepper, garlic, chorizo and cajun seasoning and cook for 5min more
Add the rice, tomato, stock and re-add the chicken
Cover and simmer for 20-25min
